I will post 7 zucchini recipes for 7 days. I know it is not sound so exciting, it is just zucchini right? and many of you may don’t like it. I did not like it until around the last summer. I don’t know what happened, what made the switch, but now i am very glad…. and enjoying this very delicious and sweet vegetable.

Raw Vegan Zucchini Salad
What you need:
Slice the zucchini in lengthwise and then cut them into little stripes.
Cut the tomato and the green onion and put everything into the plate.
Pour some olive oil on the top and salt, pepper (and any other seasoning of your choice) and the parsley.
Mix it and Voila!!!
