This recipe a little more challenging, but worth it.
What you need:
1 big Zucchini1 and 1/3 cup cooked quinoa
1 tbsp flax seed (soak in 3 tbsp water for about 10 min)
1 tbsp lemon juice
seasoning of your taste
Put the shredded zucchini and quinoa into a pot, add the salt, lemon juice, parsley, green onion and the soaked flax seed.
Mix it all together.
Heat some coconut oil in the skillet and form round patties and put into the skillet on medium heat. Keep eye on them, it takes around 2-3 minutes per side. When one side is brown and crispy, flip them over (use a spatula, because it is not so easy to move them 🙂 ).
I put the fritters between 2 slices of bread, add tomato, green onion and put it into a panini maker…….delicious 🙂
