Vegan Zucchini and Veggie Rice Pasta

4. Day 🙂

What you need:
1 Zucchini
1/2 White carrot
1/2 (middle sized) Sweet potato
1/2 Tomato
Green onion
Salt (it is additional, the soy sauce is already very salty)
7-9 tbsp Soy sauce (or even more, i really like the taste of it) 🙂
2 tbsp Rice vinegar
Rice pasta

How to:
Start with preparing the rice pasta (as it’s mentioned on the packet) (most likely, put the amount you like into a pot and pour hot water on it and cover it. Leave it like this until you make the vegetable)
Cut in slim slices all the vegetable and put into a skillet, pour some soy sauce and rice vinegar on it and 1/2 dl water.


Put a lid on top. Check time to time (add more water if needed) it is ready when the vegetable slightly soft. We dont want to cook them, just have a little softness.
When is done, put the rice pasta (after you strain it) on a plate and put the vegetable on top.

I like to eat this with chopsticks. It puts you into an Asian mood 🙂
