Once upon a time, it was Sunday 🙂 and the gourmet couple was looking for something to eat during the movie 🙂 SO… They had the idea to make this delicious potato tots with eggplant cream.
What you need:
8 medium potato
2-3 tbsp of olive oil
2- tbsp of lemon juice
3- tbsp of olive oil
Put the washed potatoes into a big pot filled with water and boil it until the potatoes are soft. (not too soft but the knife is should go through easily)
Until the potatoes are getting ready we start with the eggplant cream. Put the washed eggplant into the oven (180 C) until get soft (you will see the skin get a little brown) remove and smash with a fork, add the mustard, lemon juice, olive oil and pepper.Mix it…… and taste 😉 Done 🙂
Back to the potatos…..
Remove the water and leave it too cool down a little – because you have to remove the skin and than smash with a fork. Add the salt, olive oil and seasoning and mix it together. Make little rectangle shapes. Prepare a baking tray with wax paper and put the little potato bricks on it. Than put into the oven (180 C) after about 15 min, take out and turn them and back to the oven for 10 more minutes.
Now, everything is ready, go to the sofa, make sure you have some drinks, like lemonade 🙂 and enjoy your Sunday movie treat!
