Vegan Eggplant Hamburger

Brilliant, this hamburger is just brilliant and delicious and light and very fast to make. I wanted to make vegan hamburger for a while now, but I was lazy to make the bean burger and I find this super easy way to make a delicious hamburger using eggplant. I love it and I hope you will love it too 🙂

What you need:

– Vegan hamburger bun

– 1 eggplant

– Soya sauce

– Vegan mayo, ketchup, mustard

– Tomato

– Paprika

– Red onion

– Vegan Coconut pizza cheese

 How to:

Fry the red onion and paprika with a little olive oil in a pan. After a few minutes remove it from the heat and put it into a small dish. Use the same pan, add 3 tbsp soya sauce and 3 tbsp of water and the eggplant slices, and fry it for about 2-3 minutes, then fry the other side. (if you put a lid it makes it faster) When it is done just move from the heat. Now assemble the hamburger. Cut the bun in half and put on the top of your toaster. (like this only the inside will get grilled a little) After a few minutes put it on a plate and spread some vegan mayo on the bottom. Put the onion + paprika mix and the eggplant. Add the tomato and the coconut cheese. Spread some ketchup on the top bun and close your burger. And now you are ready to experience something amazingly delicious!!!!
