Vegan Chocolate Sponge Cake

I like to look for new recipes on the internet. Many times I end up on non-vegan sites and I find beautiful pictures of cakes and desserts…. and I get very hungry 🙂 😛 but of course the recipes on this sites are contain egg and milk, so it is a little challenge to make the recipe vegan.  So, that’s how I made this soft and tasty sponge cake. I adapted the recipe to be non-vegan. I am very happy with the result, hope you will try it out 🙂


What you need:

– 1 2/3 cup flour

– 1 1/2 tsp baking soda

– 1 tsp salt

– 2/3 cup cocoa powder

– 2/3 cup dates syrup (or 1 1/2 white sugar)

– 1/4 cup olive oil

– 50 g coconut oil

– 1 tbsp apple vinegar

– 1 1/4 cup dairy free milk ( or water) – don’t put all the milk in once. Put 1 cup and slowly add the rest if you need. You want to have a soft texture, what you can pour easily, yet little denser than a pancake mix. I hope you understand 😉

How to:

First put the dry ingredients into a ball (flour, baking soda, salt, cocoa powder) then add the dates syrup. Start to mix it with an electric mixer. Add the olive oil, coconut oil, apple vinegar, and the 1 cup milk. Mix for about 2-4 min and add the rest of the milk if needed.

Pour the mix into a silicon form and put into the oven for about 20-35 min on 175 C.

Bake until the knife comes out clear. Let it cool and then take out and enjoy!!!!
