Giant Vegan Cookies!

I love cookies and sweets πŸ™‚ and always, when I start to eat cookies – I eat one and another and another ….. and after 4-5 cookies, I realize how many I have eaten πŸ™‚ SO I came up with an idea – a tricky idea πŸ™‚ because I still eat the same amount, yet I have only one cookie πŸ™‚ Therefore, I made this very big one. I used the same recipe like VEGAN CHOCOLATE COOKIES. The only change is that, I added turmeric instead of the cocoa powder and made them bigger πŸ™‚

They are delicious, soft. Please try it out and enjoy πŸ™‚

Vegan Chocolate Sponge Cake

I like to look for new recipes on the internet. Many times I end up on non-vegan sites and I find beautiful pictures of cakes and desserts…. and I get very hungry πŸ™‚ πŸ˜›Β but of course the recipes on this sites are contain egg and milk, so it is a little challenge to make the recipe vegan. Β So, that’s how I made this soft and tasty sponge cake. I adapted the recipe to be non-vegan. I am very happy with the result, hope you will try it out πŸ™‚

Brilliant, this hamburger is just brilliant and delicious and light and very fast to make. I wanted to make vegan hamburger for a while now, but I was lazy to make the bean burger and I find this super easy way to make a delicious hamburger using eggplant. Vegan Sunflower Seed Butter Energy Ball

I am obsessed with sunflower seed butter. I can eat it at anytime….. with fruits, on bread, baked into the cookies or salty, with tomato…. the best!!! It is full with good stuff as well. I checked a Sunflower seed butter vs. Peanut butter test πŸ™‚ and my delicious sunny seed won 😎

Vegan Zucchini and buckwheat mix in rice paper

7. Day – the last day πŸ™‚
I enjoyed this journey, i tried out new recipes. I hope some of you who did not like zucchini in the beginning of the week, now you start to give it a chance πŸ™‚
I can still recommend to try it raw first and after cook always just a little and mix with other vegetables.
So now start with the last recipe of this zucchini week.

What you need:
1 small zucchini
1/2 small sweet potato
1/2 carrot
green onion
olive oil
1/2 dl water
salt
pepper
rice vinegar
rice paper
1/2 cup buckwheat

Vegan Zucchini Rice

6. Day

This is a very simple recipe. SO if you dont want to spend much time with cooking, but want something tasty, then try this πŸ™‚

What you need:
Cooked rice (1 cup cooked per person)
1/2 zucchini
1/2 tomato
salt
cumin
mustard seed
turmeric
3 tbsp olive oil

How to:
Cook your rice on your own way πŸ™‚
Cut the zucchini and tomato in small cubes and put into a skillet. Add the spices and the olive oil.

Vegan Zucchini Casserole

5. Day
This dish is sooo tasty!! πŸ™‚ I enjoyed making it and eating it πŸ™‚

What you need:
1 and 1/2 small Zucchini
Green onion
Parsley
250 ml Soy Cream
Olive oil
Salt
Thyme
Cumin powder
2 tbsp of cornstarch

Crust part:
2 tbsp coconut oil (cold)
6 tbsp flour (of your choice)

How to:
Preheat the oven to 180 C.

Vegan Zucchini and Veggie Rice Pasta

4. Day πŸ™‚

What you need:
1 Zucchini
1/2 White carrot
1/2 (middle sized) Sweet potato
1/2 Tomato
Green onion
Salt (it is additional, the soy sauce is already very salty)
7-9 tbsp Soy sauce (or even more, i really like the taste of it) πŸ™‚
2 tbsp Rice vinegar
Rice pasta

How to:
Start with preparing the rice pasta (as it’s mentioned on the packet) (most likely, put the amount you like into a pot and pour hot water on it and cover it. Leave it like this until you make the vegetable)
Cut in slim slices all the vegetable and put into a skillet, pour some soy sauce and rice vinegar on it and 1/2 dl water.
